Our 28cm solid copper saut? pan has a helper handle to aid in lifting from hot surfaces. Though the temptation to lift and shake the pan makes most of us believe we're achieving an authentic saut?, it's not necessary to move the vessel at all during cooking to accomplish the correct saut? technique. It's the action of food jumping and sizzling in the hot oil during cooking that gives this pan its French name. The superior heat conductivity of copper will facilitate accurate regulation of temperature as you saut? like a pro.
Key Features:
The high straight sides of our saut? pans retain moisture so the texture and flavour of your recipes is perfect. Non?reactive stainless interiors ensure purity of flavour every time you cook. The helper handle allows a bit of wrist action for those of you who feel a saut? isn't a saut? without a bit of shaking. Falk Culinair puts the sizzle into your saut?s.

"best pan I've ever had"
This pan, as you might expect from Falk and for the price, is exceptional. Basically, you get what you pay for. Top stuff.

"HUGE pan, but HEAVY!!!"
Huge flat base, ideal for sauteing large amounts of food. Heat distribution is excellent just as you would expect from copper, and easy to clean too when you are done. My only reservation about this has to be the weight. It is really, really heavy and would definitely not suit a petit female chef!

"excellent, but doubts about handle shape"
Key benefit is copper construction giving very even heating, especially as this is 2.5mm thick, so you don't have hot spots and burn stuff. This is of course the whole point of buying a copper pan. I like the stainless lining rather than tin, for greater robustness and I don't perceive any magic in a tin surface - even heating is what stops sticking. Nice feature is the radius of the bottom edge is quite large, so good for stirring. In 28cm size, it is fairly heavy, though not excessive, but does need the helper handle. I quite like the brushed rather than polished finish, and overall construction and feel exudes quality One negative point, losing a star; I feel the (main) handle comes up rather high and at a funny angle. Maybe it just needs getting used to. Price is OK for 2.5mm copper, albeit not cheap by any means. Service and delivery was exemplary. This gets used a lot - and the steep angled handle is still slightly annoying. Good item for all that

Our Classical Range is not compatible with induction hobs. That is a feature of the new Fusion and Signature 2.0 ranges, both of which are also constructed from solid copper and share all other identical characteristics.
