"Trying my first Falk pan"

First I tried boiling water in this and a similar sized steel pan - the bubble pattern is noticeably different, maybe there is something beneficial to be gained from using copper pans, other than good looks. I think I can detect a difference from my use of the pan but it may just be my bias. After about a years use the pan still appears new, without much fuss involved at the sink. It looks very nice on a shelf in my average sized kitchen which is now due for an extension to accommodate a few more of these pans - well I wouldn't wan't to have to put them in a cupboard...

"18cm Saucier - useful addition"

My pans range from an antique copper fish kettle, mid-range tri-copper to high-end Mauviel and Falk. The 18” gets regularly used for sauces - smooth bottomed so nothing stuck in the corner. Heavy, and quick to heat - on my gas hob I get an even cooking temperature very with the iron handle staying cool. My Falk compares favourably to the heavy gauge Mauviel; craftsman ship is fault-less, handle attached firmly in Brunellian fashion. Key advantage over its French companion is the finish does not tarnish as easily, the matt effect easy to maintain. Due to two babies in the house I once let my pan boil dry. I was able to easily remove the soot from the outside and burnt on béchamel remains from within without any marks.
